Indian Buttered Chicken
Take chicken and season on both side liberally
Add 1 tablespoon of olive oil to a skillet over medium heat. Turn chicken over every five minutes guaranteeing the chicken's skin is thoroughly cooked.
Once the skin is charred, add the chicken to a dutch oven.
Add the butter cooking sauce and cover the dutch oven
Ensure fire is at a low to medium heat and let the chicken cook in the sauce for another 20 minutes. This process ensures the chicken is completely seasoned with the sauce as well as cooked all the way through
I served this chicken with fried cabbage and added Jasmine rice.

Chicken and Cabbage stir fry served with rice
Take 1/3 of a cabbage and thinly slice the cabbage in to thin slices.
1/3 white onion cut up fajita style
1/2 red bell pepper
1/4 green bell pepper
Take one pack of boneless chicken thigh
Slice the chicken into fajita style pieces. In essence very narrow cuts
Use 2 tablespoons of Olive oil or coconut oil in a wok. Let the oil heat up on a medium fire for a few minutes before adding meat.
Once the wok is hot, add the meat and cook until thoroughly done.
Add cabbage, bell peppers, and onions.
Continue to mix until the cabbage softens up.
Add 1 tablespoon of garlic powder
1 tablespoon of Pink Himalayan salt
1 teaspoon of Black Pepper
Stir a few more times until all ingredients are mixed well.
I served mine with white rice, fresh vegetables and shrimp tempura. I topped it with a Vietnamese Chili Sauce and my husband used teriyaki sauce on his. Enjoy!

Broiled Scallops
Use medium to large scallops. I used a little over 2 pounds
1 tablespoon of lemon juice
1 teaspoon of garlic salt
1/2 teaspoon of parsley
1 tablespoon and melted butter
Squeeze lemon juice, followed by melted butter directly on scallops. Spread seasonings over liberally. Place in a broiler on High, for 10 minutes.
Remove and Enjoy!!!!!
Baked Salmon topped with fresh garlic wrapped in foil
Use 10-12 cloves of garlic
1/2 green or red bell pepper
1 tablespoon of pepper mix
1 tablespoon of seasoned pepper
1 tablespoon of Pappy's
1/2 tablespoon of Poultry rub
1 teaspoon of sea salt
1/2 stick of pure butter
Add garlic and bell pepper to a food processor
This is a 2 pound piece of salmon
Rinse salmon and line a cooking pan with foil large enough to completely cover the salmon
Melt butter and pour over salmon once pan is lined
Combine seasonings and sprinkle of salmon
Add finely copped or food processed vegetable evenly over salmon
Completely wrap salmon. Do not let the foil over the salmon touch the vegetables on top
Cook for 25 minutes on 375 degrees
Remove from oven and Enjoy!!

Good Morning my good people, please excuse my lack of post over the last few weeks. I've started my first course in my Culinary program, and just completed my package for Graduate school. In addition summertime is a REALLY busy season in my home. I have added some recipes and plan on adding the ingredients within the next couple of days. Braised beef shanks in red wine and beef broth
I used beef shanks for this recipe. I believe they were about 1-2 pounds a piece. The bone marrow IS in the meat.
Remove from package and rinse
In a large skillet maintain a medium to high heat. I used Olive oil to base the meat in. Sprinkle salt and pepper on each side.
Turn meat over on both sides and ensure a quick and thorough braise.
Place in a large roasting pan after braising
Use 1/2 onion, 10 cloves of garlic and 1 celery stalk
Place all vegetables in a food processor and until VERY fine
Use 2 cups of red cooking wine and 2 cups of beef broth. You can also use a really dry red wine such as a chardonnay. Place in skillet that the meat was braised in . Add onions, garlic and celery and stir for 8-10 minutes
Pour the red wine and beef broth mixture and its contents that were mixed over the skanks in the roasting pan over the braised skanks
Cover with foil and cook for 4 hours on 350 degrees. Remove from oven and serve over mashed potatoes with your favorite vegetable.
