Broiled Scallops

 
Use medium to large scallops. I used a little over 2 pounds

1 tablespoon of lemon juice
1 teaspoon of garlic salt
1/2 teaspoon of parsley
1 tablespoon and melted butter

Squeeze lemon juice, followed by melted butter directly on scallops. Spread seasonings over liberally. Place in a broiler on High, for 10 minutes.

Remove and Enjoy!!!!!
 

Baked Salmon topped with fresh garlic wrapped in foil

 
Use 10-12 cloves of garlic
1/2 green or red bell pepper

1 tablespoon of pepper mix
1 tablespoon of seasoned pepper
1 tablespoon of Pappy's
1/2 tablespoon of Poultry rub
1 teaspoon of sea salt
1/2 stick of pure butter

 
Add garlic and bell pepper to a food processor

 
This is a 2 pound piece of salmon
Rinse salmon and line a cooking pan with foil large enough to completely cover the salmon

 
Melt butter and pour over salmon once pan is lined

 
Combine seasonings and sprinkle of salmon

 
Add finely copped or food processed vegetable evenly over salmon


 
Completely wrap salmon. Do not let the foil over the salmon touch the vegetables on top


 
Cook for 25 minutes on 375 degrees
Remove from oven and Enjoy!!

Good Morning my good people, please excuse my lack of post over the last few weeks. I've started my first course in my Culinary program, and just completed my package for Graduate school. In addition summertime is a REALLY busy season in my home. I have added some recipes and plan on adding the ingredients within the next couple of days. Braised beef shanks in red wine and beef broth

 
I used beef shanks for this recipe. I believe they were about 1-2 pounds a piece. The bone marrow IS in the meat.

 
Remove from package and rinse
 
 
In a large skillet maintain a medium to high heat. I used Olive oil to base the meat in.  Sprinkle salt and pepper on each side.

 
Turn meat over on both sides and ensure a quick and thorough braise.

 
Place in a large roasting pan after braising
 
 
Use 1/2 onion, 10 cloves of garlic and  1 celery stalk


 
Place all vegetables in a food processor and until VERY fine

 
Use 2 cups of red cooking wine and 2 cups of beef broth. You can also use a really dry red wine such as a chardonnay. Place in skillet that the meat was braised in . Add onions, garlic and celery and stir for 8-10 minutes

 
Pour the red wine and beef broth mixture and its contents that were mixed over the skanks in the roasting pan over the braised skanks

 
Cover with foil and cook for 4 hours on 350 degrees. Remove from oven and serve over mashed potatoes with your favorite vegetable.
Enjoy!!

Purple Cauliflower

This literally taste just like regular cauliflower, it is just prettier

Turn upside and remove the stems and leaves

Rinse

I boiled them for 10 minutes, drained and added desired seasoning. I just used basic table salt and pepper.
Enjoy!!!

Ground Chicken Burgers

 
Use two pounds of ground chicken


2 tablespoon of poultry seasoning
2 tablespoons of garlic powder
2 tablespoon of Pappy's (substitute Pappy for 1 tablespoon of salt)
2 tablespoons of Old Bay
1/2 half green bell pepper
1/2 half red bell pepper
1/2 red or white onion
1/2 cup of bread crumbs
2 eggs

Finely chop vegetables up


 
Combine all ingredients

 
Add finely chopped vegetables

 
Split into medium size patties. Approximately 1.5 inches thick and 4-5 inches wide 

 
I used a stove top grill. Cook each side around 6-8 minutes

 
Cut up desired condiments. I use red onions, tomatoes, cheese and lettuce

 
Place to the side once they are finished

 And Enjoy!!!!!

Ground Turkey Meatloaf with Cream of Mushroom Sauce

Stuffed ground Turkey Bell Peppers

Stuffed bell peppers were first introduced to me by my cousin's grandmother who was from New Orleans. She would called them "millitants" I have had them stuffed with seafood, ground beef, ground turkey, corn and a variety of other things. I think this is a quick meal, when you have leftover rice (brown or white), quinoa or even small noodles.
Bread Crumb- Any store
Chicken and Poultry Rub- Sam's Club
Tony Chachere's Creole Seasoning- Any Store
Old Bay- Any store 
2 pounds of fresh ground turkey 
This is about 2-3 cups of cooked rice from the night before 
I use 5 bell peppers. I had 2 halves of red and yellow. You can use the same color, or mix them up. It is a personal preference.  
Cut the stem of the bell pepper out, before you cut the bell pepper into two parts.  
If the stem is cut properly, when remove majority of the seeds will accompany the stem. Leaving a few seeds in will not harm the taste of the meal.
1/2 onion
1/4 cup of bell peppers minced
1 tablespoon or creole seasoning
1 tablespoon of Poultry seasoning
2 tablespoon of Old Bay
3/4 cup of bread crumbs
2 table spoons of Worcestershire sauce 
Combine all ingredients. Honestly I make sure my hands are realllly clean and I mashed everything together. I believe this mixes all the ingredients up thoroughly  
Stuff the bell peppers until there is a rounded top layer. I put about a tablespoon of olive oil in the bottom of the pan to ensure they won't stick. I also put 3 table spoons of water to create a steaming effect when the lid is on and they are cooking. 
Take one 8 ounce can of tomato sauce and pour over each bell pepper
Once sauce is poured thoroughly, cover and cook for 45 on 350 degrees
Eat and Enjoy!!!
