Cornish hens with a brown sugar, thyme and white wine sauce

Remove from packaging
Rinse Cornish hens and cut right down the middle 
 Place right side up
Combine
1/2 cup of white cooking wine
1/2 cup of brown sugar
Mix together
Pour over Cornish hens
Add the below seasonings to the birds liberally.
2 tablespoons of Pappy's all purpose seasoning (Costco)
1 tablespoon of seasoned pepper
1 tablespoon of adobo seasoning.
1 teaspoon of dried thyme.
Place Cornish hens in a glass baking dish and cover with foil. Place dish in a preheated oven on 350 and cook for 1 hour and 15 minutes.
 
Uncover the birds, using the base created, use a suction bulb and the base over the birds. Cook un covered for another 20 minutes and serve hot.

New York Strip steak in a red wine, garlic and rosemary ajus

Take New York strip steak and marinate them in the following .
1 tablespoon garlic powder
1 tablespoon of cracked pepper
1 teaspoon of olive oil
1 tablespoon of black salt
Mix the seasonings and apply evenly to both sides of the meat
I let the meat marinade for 4-5 hours, while covered in the refrigerator
Heat a large skillet on a high fire. Add 1 tablespoon of coconut oil to the skillet.
Turn until cooked to desired cooking level. At the very end add 1/4 cup of dry red wine to the skillet right before removing from the skillet I made these to be medium.
Remove from skillet, let the meat cool for a few minutes, slice.
Take 4 cloves of fresh garlic
 Add 2 tablespoons of  fresh rosemary and mix together and serve
