Real homemade cornbread muffins

We don't do Jiffy over here!

Turnip and Collard greens

4 bunches of mustard
2 bunches of collards
Cut them up into 2 inch
Soak in water with a pinch of soap. I rinse my green 4 times to ensure they are free from any dirt or tiny bugs
3 cans of chicken broth
1/2 white onion
1/2 red bell pepper
1/3 yellow bell pepper
4 gloves of garlic peeled
Cut all the vegetables up
Pour chicken broth in a large Dutch oven
(you can use water, however chicken broth provides more flavor.)
Add the vegetables last.
I cook my greens on a  medium fire for 3 hours. The last hour I add 2 tablespoons of vinegar. It ensures the tenderness of the greens
Enjoy!

Hot wings

Remove wings from the bag, rinse off and place to the side
I use 2 tablespoons of seasoned pepper
1.5 tablespoons of sea salt
1 table spoon of garlic powder
1 tablespoon of Old Bays Seasoning.
Place seasoned chicken in a flat wide dish
Cook in a preheated oven on 350 for 1 hour covered with foil. Remove from oven. Drain all chicken broth from the chicken.  Mixed 3 table spoons of butter, 1/2 cup of your preferred hot sauce, 1 teaspoon of paprika in a separate mixing bowl. Once chicken is drained, place the chicken in a large metal mixing bowl with hot sauce and butter, garnish the chicken with the paprika. Make sure the sauce is evenly spread on the chicken. Pour the chicken and the sauce back in the dish that the chicken was originally cooked it. Cook for another 30 minutes uncovered. Remove from oven, sprinkle a teaspoon of parsley on the top of the chicken and serve with a Ranch dip.

Potato Skins

Thoroughly rinse and scrub the potatoes, individually wrap the potatoes in enough foil to completely cover the potato. Preheat the oven to 400 degrees. Cook the potatoes for 45 minutes on each side. Remove from oven after an 1.5 hours. Cut the potato in halves. Remove 1/3 of the potato placing it to the side.
Place potato halves in a wide dish large enough to hold all of the potatoes. Take a handful of shredded four cheese and fill up the middle of the potato with the desired amount of cheese. I sprinkle seasoned pepper and Adobo seasoning over the potatoes
Take 3 strips of bacon and cook until the desired level of heat is reached. Remove from skillet, let bacon cool for a few minutes. Use a chopping knife to cut the bacon up in smaller pieces. Take 3 stalks of green onions and finely chop them.  Add remaining ingredients to the top of the potato skins.
Place back in the oven lowering the heat to 375 degrees, cook for an additional 20 minutes without anything covering them. Remove and serve with Sour Cream.

Oven BBQ baby backs

Take the slab of ribs and rinse them off
Place the rinsed ribs a flat surface, generally on the counter top. I normally place a piece of wax paper on the countertop to protect the surface and the met itself. If you season the meat in the dish in which you will bake the meat if you have a dish long enough. take the tip of the meat between the bones and cut 2 inches. This makes the meat easier slice once it is cooked.  Season the meat liberally.
1 table spoon of seasoned pepper
1 tablespoon of rosemary
1 table spoon of garlic powder
1 table spoon of sea salt
Repeat the above after turning the meat over.
Place the meat in a dish in a preheated oven on 350 degrees. Cover the meat with foil and cook for 1 hour. This cooking time is for one slab of ribs. Cooking time may vary depending on the amount of slabs that you have.
Remove ribs from oven and let cool for 10 minutes. Remove the foil and place on a wooden chopping board. Continue to cut the ribs at the top of the slab between the bones where the initial cut was placed. Slicing the ribs individually. Place in a large metal mixing bowl and pour BBQ sauce over. Mix the meat up and place the metal mixing bowl in the oven, lowering the temp of the oven to 170 and let continue to cook for another 20 minutes uncovered. Remove and serve while hot.  You can garnish with a parsley if desired.
